Edwin Blanca’s career in the culinary world is filled with hard work, global experiences, and a deep love for family. From the vibrant kitchens of San Francisco to his current role as Chef de Partie at FoodSpace, Edwin’s journey reflects a passion for food.

An International Path
Born in the Philippines, Edwin’s love for cooking was sparked by his grandparents. “They were always in the kitchen, and we weren’t allowed to touch anything. That’s how I started learning”.  At 18, Edwin moved to the United States, initially pursuing marine engineering before shifting to culinary studies.

His career began on a cruise ship in Miami, introducing him to diverse culinary styles. Edwin later settled in San Francisco, where he spent a decade at the prestigious Sheraton Palace Hotel. It was in this bustling city that he met his wife, and together they decided to start a new chapter in Ireland.

In Dublin, Edwin worked at Herbert Park Hotel before relocating to Kilkenny. Over the years, he built a strong professional reputation at local establishments like Lyrath Estate and his local café. where he met Rory and Martin, colleagues who remain integral to his career.

A Day in the Life at FoodSpace
As a Chef de Partie at FoodSpace, Edwin’s day starts early with breakfast preparation and pastry baking. His attention to detail ensures that every dish meets high standards, and he seamlessly transitions to assist with main courses.

“I like my space and cleanliness. A tidy kitchen makes all the difference,” he emphasises. Having worked alongside Rory and Martin for over 10 years, Edwin values the camaraderie they’ve built. “We understand each other, and that makes our workday go by smoothly,” he says.

Family as a Driving Force
For Edwin, family is his greatest motivation. He and his wife have three children: Áine, Luke, and Killian. “Everything I do is for them. I want to ensure they have opportunities and a life without struggles,” Edwin shares.

Weekends are reserved for family time, whether exploring new restaurants or enjoying walks together. Cooking at home also remains a joy, allowing Edwin to share his culinary creations with his loved ones. His international experience has also shaped his culinary style, influenced by the Spanish flavours of his upbringing and the diverse cuisines of the Caribbean. Edwin brings this rich background to every dish he creates.
