Food waste is one of the biggest challenges facing the industry today, but we see it as an opportunity. Instead of tossing food scraps, we transform them into new, flavourful dishes. From root-to-stem cooking to using surplus ingredients in innovative ways, we minimise waste while maximising taste.
For example, vegetable peels become rich stocks, overripe fruit turns into jams and chutneys, and stale bread is reinvented into crunchy croutons or breadcrumbs. These creative approaches allow us to reduce waste while offering delicious and sustainable options on our menus.
Building a Better Future
Sustainability goes hand in hand with mindful eating. We encourage customers to order dishes suited to their nutritional needs and take pride in our closed-loop food systems, where food is grown, harvested, and regenerated sustainably.

Additionally, we display the nutritional values of our menus, giving customers the opportunity to make informed choices that align with their dietary preferences and wellness goals.
We also take a holistic approach to sourcing by partnering with local farms and suppliers within a 50-mile radius. This ensures that our ingredients are as fresh as possible while also reducing transportation emissions and supporting local growers and producers. By keeping our supply chain close to home, we minimise food miles, enhance quality, and contribute to the circular economy within our community.
Additionally, we have eliminated plastic packaging across our business. Ingredients that need to be stored are placed in glass jars and reusable containers, completely removing the need for single-use plastics.
Technology
We believe technology plays a major role in creating a more sustainable food industry. That’s why we implemented AI-powered tills to streamline operations and eliminate unnecessary paper waste. By going paperless, we reduce our environmental impact while improving efficiency. Digital solutions also help us track food usage more effectively, ensuring that we stay true to our zero-waste commitment.

The Gambia Cookery School Project
One of our most impactful initiatives is our collaboration with Waste to Wonder Worldwide on the Gambia Cookery School Project. This project embodies the spirit of empowerment, education, and sustainability, addressing the pressing need for food security and nutrition education in Gambia.
The Cookery School provides culinary education, promotes sustainable practices, and empowers local communities to grow and prepare their own food effectively.
Participants not only learn cooking techniques but also how to grow sustainable crops in their environment, enabling them to prepare nutritious meals and sell surplus produce at local markets. This contributes to both food security and the local economy.
A key principle of the project is embracing the circular economy—transforming resources into valuable tools that enhance the school’s operations and support the community’s sustainable practices. By teaching students zero-waste principles and innovative cooking techniques, we are helping to create a future where food is respected, resources are maximised, and communities thrive.
