Rocky Road – A Chocoholic’s Dream Delight

Ingredients:
- 400g milk chocolate buttons
- 125g Golden syrup
- 125g unsalted butter
- 100g mini marshmallows
- 200g digestive biscuits (chopped)
- 200g white chocolate chunks or buttons
- 50g dessicated coconut
Method:
- Line a 9″ square tin with parchment paper and leave to the side.
- In a large bowl, add in the chocolate, golden syrup, unsalted butter and melt on a low heat over a double boiler, or in the microwave on short bursts of 30 seconds until fully melted then stir until smooth!
- Once its melted and combined, add in the mini marshmallows, chopped digestive biscuits, and chopped white chocolate chunks and fold together evenly.
- Sprinkle dessicated coconut over mixture.
- Pour your mixture into the tin and spread until it’s even.
- Refrigerate for at least 2 hours or overnight until mixture is set. Cut up into squares.
