Irish Strawberries
So it’s finally here… one date that I really look forward too and that is Irish Strawberry season. Mainly because I live in Wexford and am biased but they are the best strawberries ever.
They always bring back great memories as a child, coming home from the beach in the back of my parent’s car and stopping on the side of the road where my Mam would pick up a large punnet of the sweetest most delicious strawberries to enjoy after dinner and the arguments on the way home as we couldn’t help ourselves but to pick at them and eat the majority before we got home.
My favorite dessert to show case these juicy, gorgeous, sunshine berries is the simple & delicious strawberry Pavlova.
Ingredients
- 4 free range egg whites
- 250g caster sugar
- 1tsp white wine vinegar
- 1 tsp cornflour
- 1 tsp real vanilla extract
For the topping
- 700g strawberries, hulled and halved
- 2 tbsp icing sugar
- 350ml cream
Method
- Heat oven to 150CWhisk
- 4 egg whites with a hand mixer until they form stiff peaks, then slowly whisk in 250g caster sugar, until the meringue looks shiny
- Whisk in the white wine vinegar, cornflour and vanilla.
- Spread the meringue onto a baking sheet lined with parchment, you can use a round or rectangle.
- Bake for 1 hr, then turn off the heat and let the Pavlova cool completely inside.
- Whip 350ml double cream with the icing sugar and spread it over the meringue and fill with sliced yummy strawberries
