Spicy Sprouts

Brussels Sprouts – yep it’s a love them or hate them sort of thing…bit like marmite. But to be honest I think the Brussels Sprout gets a bad rap because of being abused and boiled until it is an unrecognizable, bland, watery thing…

Since late September these beauties have been bang in season in Ireland and they’re not just for Christmas.

My very simple recipe below would suit any dinner of supper that you have on the go but also goes great with turkey on Christmas day and can be prepared well in advance.

Ingredients

500g Brussels sprouts, halved

1 tbsp Irish rapeseed oil

1 chilli, chopped (you can leave the seeds in for extra heat)

2 Irish garlic cloves, finely chopped

1 thumb nail size of fresh ginger , finely chopped

1 tbsp soy sauce

Method

Cook the sprouts in boiling salted water for 2 mins, then drain (this can be done ahead of time). Heat the oil in a wok or large frying pan, then add the chilli, garlic and ginger & stir for 1 min. Add the sprouts, cook for 2 mins, then drizzle with the soy sauce. Serve into a nice bowl, put into the centre of the table and happy eating
