Irish Radish

For me radishes are real flavor of summer, plentiful from June onward and always ensure that you buy Irish radishes from your markets.

I love to keep it simple and below is a very quick and easy salad that is a wonderful accompaniment to add to summer supper or lazy lunch, great with lovely light salads to add a kick and also with meat and fresh seafood.

If you’re lucky enough to get the leaves etc with your radishes then also incorporate them to the recipe

Ingredients:

3 tbsp white wine vinegar or if you have a fermented homemade vinegar

1 tbsp caster sugar

1tsp of toasted sesame oil

2 scallions, finely sliced

1 large cucumber, halved length-ways

300g radishes, sliced

Small handful coriander leaves and radish leaves

Method:

  1. In a large bowl mix together the vinegar, sugar, sesame oil and scallions.
  2. Slice the cucumber and add to the radish. Mix into the dressing and add coriander & radish leaves. Simple… enjoy
