At FoodSpace we are constantly looking at what by products we get from our great local ingredients and dishes and what we can do with them, from making cheeses, pickling, fermenting and in this case we are looking at Coffee. In NUI Galway we have a large volume of coffee sales across our four cafes and obviously this leads to a lot of used coffee grounds. So over a month we measured how much we were producing and then planned what we can do with them. Straight away we turned to our composting. Measuring the right amounts of coffee grounds to soil adds much needed nitrogen and helps in the growing process of vegetables and plants. So a quick meeting with the gardening team in NUI Galway led to the introduction of the new plant boxes where we can use our grounds to grow herbs, kales and leaves along with plants like heathers.
