Cauliflower is one of those ingredients that really comes into its own this time of year, simple, versatile, and full of flavour when treated right.

Often underestimated, it’s a true kitchen staple that can take centre stage on the plate. When roasted, cauliflower brings out a natural sweetness and depth that makes it both comforting and satisfying.

We love working with seasonal vegetables that deliver both flavour and function. Cauliflower is a perfect example: adaptable across menus, great for plant-forward cooking, and ideal for creating dishes that feel both nourishing and indulgent.

This dish is all about simplicity done well - golden roasted cauliflower, layered with bold flavours and balanced with freshness and texture. It’s the kind of food that proves vegetables don’t need to be complicated to be the hero.

Chef Rory’s Notes on Cauliflower

Cooking in season is about making the most of ingredients at their best and cauliflower is a great example of that.

It’s incredibly versatile: roast it, grill it, blend it, or break it down into salads. It carries flavour beautifully and works across a range of cuisines and cooking styles.

Roasting is one of the best ways to bring out its full potential. High heat caramelises the edges, creating a rich, nutty flavour while keeping the inside tender.

Using vegetables like cauliflower as the focus of a dish supports more sustainable menus while still delivering something satisfying, balanced, and full of character, a key part of how we approach food at FoodSpace.

Ingredients

  • 1 large cauliflower, cut into florets
  • Olive oil
  • Salt and pepper
  • Spices of choice (e.g. paprika, cumin, or chilli flakes)
  • Fresh herbs (parsley or coriander)
  • Lemon juice

(Adjust depending on your exact recipe if needed)

Method

  1. Preheat the oven to 200°C.
  2. Place the cauliflower florets onto a baking tray.
  3. Drizzle with olive oil and season well with salt, pepper, and your chosen spices.
  4. Toss everything together to ensure the cauliflower is evenly coated.
  5. Roast in the oven for 25–30 minutes, turning halfway through, until golden and caramelised.
  6. Remove from the oven and finish with a squeeze of fresh lemon juice and chopped herbs.
  7. Serve warm as a side dish or as the centre of a plant-forward plate.
