Ingredients
- 115g Ground Almond
- 45g Pumpkin Puree
- 45ml Maple Syrup
- 1 tsp Mixed Spice
Optional Pumpkin Spice Coating
- 100g Sugar
- 1 tsp Mixed Spice
- 20ml of Maple Syrup
Toppings
- Sweetened Mascarpone Cheese
- Almond Flakes
- Orange Zest
Method
- Preheat the oven to 180°C. Line a baking sheet with parchment paper. Grease them using a cooking oil spray and set aside.
- In a mixing bowl, stir the ground almond, pumpkin puree, maple syrup and mixed spice. Stir until it forms a sticky, firm dough.
- Roll it into small balls and place on the prepared baking tray.
- Bake the bites for 12 -14 minutes at 180°C until the edges are golden and dry.
- Let the bites cool down on the tray for 5 minutes, then gentle transfer them to a cooling rack. Use a teaspoon to remove them gentle from the tray. They will be a bit soft and will firm up as they cool down.
- Cool them down for 30 minutes. They can be eat plain or use the optional coating in the next steps.
- In a small bowl, stir the sugar and spice together. Lightly brush all the sides of the pumpkin bite with maple syrup and roll it into the pumpkin spice sugar. Repeat until all bites are covered.
- Tap the bites with a dollop of sweetened mascarpone cheese, almond flake and orange zest.
- Enjoy!
