
Carrot Cake Recipe – Easy
Makes 12 large portions
Cake Ingredients:

- 250 ml coconut oil
- 4 large eggs (beaten)
- 225g brown sugar
- 200g grated carrot
- 300g self-raising flour
- 1 tsp baking powder
- 1 tsp mix spice or cinnamon
- 1 tsp ginger(ground)
- 80g of walnuts or pecans
For the Icing
- 50g butter(melted)
- 40g icing sugar(can be doubled if icing is to be sweet)
- 250g cream cheese
- 3 drops of vanilla
Method:
- Add all cake ingredients to a mixer and mix till well combined (mix should be wet and thick) (If you do not have a mixer, then use the spatula to combine all ingredients).
- Place in a parchment lined cooking tin and bake for 35 minutes or until a knife or skewer can be inserted into the centre of the cake and come out clean continue cooking until this is achieved.
- Once cake is cold Wisk all icing ingredients and using a spatula spread over the cake
