Carrot Cake Recipe – Easy

Makes 12 large portions

Cake Ingredients:

  • 250 ml coconut oil
  • 4 large eggs (beaten)
  • 225g brown sugar
  • 200g grated carrot
  • 300g self-raising flour
  • 1 tsp baking powder
  • 1 tsp mix spice or cinnamon
  • 1 tsp ginger(ground)
  • 80g of walnuts or pecans

For the Icing

  • 50g butter(melted)
  • 40g icing sugar(can be doubled if icing is to be sweet)
  • 250g cream cheese
  • 3 drops of vanilla

Method:

  1. Add all cake ingredients to a mixer and mix till well combined (mix should be wet and thick) (If you do not have a mixer, then use the spatula to combine all ingredients).
  2. Place in a parchment lined cooking tin and bake for 35 minutes or until a knife or skewer can be inserted into the centre of the cake and come out clean continue cooking until this is achieved.
  3. Once cake is cold Wisk all icing ingredients and using a spatula spread over the cake
