Serves – 6

Ingredients:

·      900g rhubarb

·      900g sugar

·      450g sultanas

·      1 pint vinegar

·      25g salt

·      25g powdered ginger

·      1 onion – finely chopped

·      1/2 teaspoon cayenne pepper

·      1/2 teaspoon ordinary pepper

Method:

1. Put the ingredients into a large pan, bring to the boil and reduce heat.

2. Let it bubble away until thick and dark brown.

3. Stir every now and then.

4. Bring off the heat and pour into clean sterilised jars, put the lid on and store.
